Simple Fruit Salads

Tip- To be able to make these types of quick fruit salads for dinner, store the canned fruit that you plan to use in the salads in the refrigerator so that the fruit will already be chilled.

Tropical Salad

A plain fruit salad that I used to make often, but haven't in many years, is this simple combination.

Ingredients

  • 2 ripe bananas - not too ripe, solid yellow, sliced
  • 8 oz. pineapple chunks in natural juice (not syrup)
  • 1 diced apple
  • 1/4 cup shredded coconut (optional)

Directions

Drain the pineapples, but reserve the juice. Place all of the ingredients in a bowl. Stir. Add enough of the pineapple juice to moisten the bananas and apples. Stir again. Divide the fruit into serving bowls, and place in the refrigerator until serving time - within the hour.


Holly's Salad

My daughter liked this salad, so I call it Holly's Salad

Ingredients

  • 2 ripe bananas - not too ripe, solid yellow, sliced
  • 8 oz. pineapple chunks in natural juice (not syrup), partly drained, retain 1/2 of the juice, drink the rest
  • 1/2 small can of mandarian oranges, drained

Directions

Mix and serve.
