Chicken Basil Fettuccine

Quick meal, enough for 3. :-)

Ingredients

  • 9 ounces of chicken cut into small bite sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil (optional)
  • 2 quarts water in which to boil fettuccine
  • 8 ounces fettuccine noodles
  • 1/4 cup basil pesto (more could have been used, but this was how much I had in the refrigerator)
  • salt

Directions

In a 4 quart saucepan, bring the water to a boil, add fettuccine, set timer for 10 minutes. Meanwhile, in a frying pan, add the oil and chicken, cook over medium heat until chicken is done. Turn heat off under frying pan. Crumble the dried basil over chicken and oil in pan, stir, optionally cover the pan, and leave it for now. When the fettuccine is done, drain it and then pour it back into the sauce pan. Add the pesto to the fettuccine, stir, add the chicken and oil to the fettuccine, stir. Salt to taste and serve.
