Chocolate Oatmeal Cookies
Very popular. My recipe has a higher cocoa to sugar ratio.
- 2 cups sugar
- 1/2 cup butter (one stick)
- 1/2 cup milk
- 4 Tablespoons cocoa
- 1/3 cup peanut butter
- 2 1/2 cups dry oats (not cooked)
- 1 teaspoon vanilla extract
Place in a 3 quart saucepan the sugar, butter, milk, and cocoa. Mix. Boil over medium heat for 2 full minutes and no more. Turn stove off. Stir in peanut butter and vanilla extract. Stir in the oats until blended. Drop by heaping tablespoons onto a 2 foot section of waxed paper. Let cool. Store in an airtight container.
