  • 1 egg
  • 1 cup all purpose flour*
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons butter-- melted


Heat electric skillet or griddle to around 325 degrees F. Mix the ingredients in a bowl with a hand whisk. Place a little butter or oil in the skillet. Measure about 1/4 cup of the batter and pour onto the heated, lightly greased pan for each pancake. Do this until the pan is full, but leaving space between each pancake. Cook pancakes until bubbly and the edges appear dry. Flip the pancakes and cook the other side until golden brown.

serves 2 or 3

*If using self-rising flour, omit baking powder and salt.
For tiny pancakes, use one Tablespoon of batter per pancake
