Porcupine Balls

Ingredients

  • 1 lb. ground beef
  • 1/4 cup finely chopped onion
  • 1/4 cup rice, uncooked
  • 1/4 cup catsup
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 8-ounce can tomato sauce

Directions

Preheat oven to 350 degrees farienhight. Pour 1/2 of the tomato sauce in a 1 1/2 quart (or 2 quart) oven proof baking dish.

Combine ground beef, onion, rice, catsup, salt, and pepper in a bowl. Combine well, use your hands. Break off small pieces and roll into balls, each one no more than 1 inch across. Mine usually end up being 3/4 inch across. As you make them, place them in the baking dish. Pour the rest of the tomato sauce over the meat balls. Cover dish with foil. Bake for 1 hour.
Meal: Serve with colorful vegetables such as green beans and corn.
